Carrot Cake

Ingridients
2 cups sifted flour
2 tsps. baking soda
1 3/4 cups sugar
1 cup chopped nuts (optional)
2 tsps. cinnamon
1 1/4 cups butter
4 eggs
1 tsp. salt
raisins (optional)
3 cups grated carrots
Procedure:
Combine flour, baking soda, sugar, cinnamon, butter, and salt. Add eggs,
one at a time, beating well after each addition. Add carrots, then the nuts
and raisins. Bake in a preheated 350 degrees oven for 35 - 40 minutes or until
it's done. Cool for 10 and frost.
Frosting Ingridients:
1/4 cup melted butter
2 tsps. vanilla
6 ounces cream cheese
1 cup flaked coconuts
powdered sugar
Procedure:
Beat butter and cream cheese. Add sugar. Blend in coconut flakes and
spread over the carrot cake.
NOTE: You can also use zuccini (aside from carrots) to make the cake.
